Recipes for Mud Season

Here in New England we are blessed with a fifth season every year. Mud season―the time between winter and spring―when snow covered fields and mountain tops give way to browned, muddy messes that make our dirt roads useless, ruin our shoes, and make even the heartiest New Englander crave the sunshine of faraway places. While we haven’t had nearly enough snow this year, heavy rains have graced us instead, and we are in the midst of what is likely to be a long and gloomy wait for springtime.

Here are a few of my classic recipes to bring a bit of sunshine to the season.

Both the Spaghetti with Fresh Herbs, Pepper and Lemon and Tacos with Spring Greens, Grilled Seafood, and Cilantro Vinaigrette  are light and colorful main dishes. Simple to prepare, they’ll leave you with enough time to make a Golden Cake with Buttercream Frosting for dessert. This cake is a Bray family favorite―golden layers flavored with white wine are stacked, filled, and coated with decadent buttercream. It’s my go-to cake for any celebration. The Marinated Winter Vegetable Salad is so full of color and flavor that it can be a meal on its own. Or it will taste great alongside a classic Crispy Potato Cake. For breakfast, try these Sunshine Filled Orange and Berry Muffins. Their orange flavor will transport you to warm places, and they are a perfect way to use up any berries you froze at the end of last summer.
